Rhona Rowland reviews a true Welsh wonder – The Corran Resort & Spa  

Hidden in the marshlands of Carmarthenshire, not far from Dylan Thomas’s famous boathouse in the town of Laugharne, this boutique spa hotel is a firm favourite with guests and local residents alike. In April, it was awarded four AA stars, while its already acclaimed restaurant earned two AA Rosettes at the first attempt. The Corran offers an imaginative menu, packed with locally sourced ingredients and seasonal specialities.

From the evening menu, we enjoyed a delicately flavoured carrot and cumin soup, followed by seared Carmarthenshire rib eye steak and pan-fried cod – each dish accompanied by fresh and perfectly cooked local vegetables. A rich chocolate fondant and a Welsh cheeseboard rounded off an extremely satisfying dining experience.
